It is perhaps one of the happiest combinations of cheese and wine, it seems that, especially some cheeses, are made to be matched with a glass of wine and yet it is not easy to find the right combination. This depends on the vastness of flavors and types of cheese, ranging from the most fresh soft cheese, to the more seasoned.

• The first tip to keep in mind is that the cheese and wine flavors should always be clearly identifiable, in fact we must avoid to predominate the wine taste to that of cheese and vice versa.
• Good rule, if we choose to serve a cheese after a meal, the type of cheese must be on the same line of the last dish this suits the same wine that has been used previously.
• Although the first thought in the pairing of wine & cheese flows more towards the reds, remember that above all with soft and fresh cheese go well with fresh white wines, soft and fragrant.
• Parmesan cheese and mature cheese with long maturation can be combined with dry sparkling wines if served as a starter but also great red wines.
• Finally, a special mention to blue cheeses such as gorgonzola that go well with sparkling red wines or with aromatic whites.
