Two years minimun in oak barriques to mature and a minimun of 36 months in the bottle, before release on the market.

Description

The entire manual care of the grapes and drastic thinning of the bunches enables to obtain a maximum yield of about 700/800 g per plant. The grapes are hand-picked and placed in small crates that are sent immediately to the cellars where are carefully selected on two selection conveyors. Each varieties of grapes does the vilification process apart. The maceration in Stainless steel tanks with the skins for 25 to 30 days. After racking the varieties are is transferred into French oak-wood barriques, 70% used – 30% new. After 12 months the varieties are blended and returned to the wooden barrels for a further year of maturing. The wine is aged in bottles for 36 months before released.
